1 c Olive oil
2 c Water

2 c Onions; chopped
1 1/2 tb Parsley; chopped
2 Ribs celery; fine chopped
1 lg Bell pepper; fine chopped
4 cl Garlic; minced
MMMMM-------------------TOMATOES & SEASONINGS------------------------
29 oz Can peeled tomatoes;or fresh
- tomatoes, peeled, chopped
15 oz Can tomato sauce
2 tb Salt
1/2 ts Ground black pepper
2 tb Paprika
1 c Sherry wine or water
1/2 ts Thyme leaves
2 Fresh basil leaves
2 c Water

1 lb Medium shrimp
6 oz Can crab meat
14 oz Fish; in small pieces
Use any boneless fish. Use more than one kind of fish if
desired.
Put oil in heavy pot and heat it. Add vegetables and
braise them over high heat for 10 minutes. Stir frequently
while braising the vegetables. Add tomatoes & seasonings.
Bring to boil. Reduce to simmer and simmer for 20 minutes,
stirring occasionally. Add seafood and cook on medium heat
for 20 minutes. Reduce to simmer and simmer until serving
time or turn heat off and then one hour before serving
time bring the stew to a simmer.
