    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Kentucky Hot Brown
    Categories: Poultry, Pork, Cheese, Dairy, Breads
    Yield: 1 Serving

    1 1/2 c Cheese sauce - below
    1 sl Toasted bread
    1 sl Turkey breast
    1 sl Country ham
    2 sl Crisp cooked bacon
    1/4 c Sharp cheese; grated
    1/4 c Parmesan cheese; grated
    Paprika

    MMMMM------------------------CHEESE SAUCE-----------------------------
    2 tb Butter
    2 tb All-purpose flour
    1 c Milk
    1 c Cheddar cheese; shredded
    1/4 ts Salt
    White pepper

    Cheese sauce: Melt butter in saucepan, over low heat.
    Blend in flour, salt and pepper. Add milk slowly,
    stirring constantly. Put in cheese and continue to
    cook until melted.

    HOT BROWN: Set oven @ 400°F/205°C.

    Put 2 tablespoons cheese sauce on bottom of individual
    baking dish. Place toast on sauce. Cover with 3 tbs of
    sauce. Put ham on top. Cover with 3 tbs of sauce.

    Sprinkle 1/2 of parmesan cheese on this. Put turkey
    slice on top. Cover with 3 tablespoons sauce. Sprinkle
    sharp cheese on this. Add rest of Parmesan. Garnish
    with paprika and bacon. Bake 15 minutes.

    NOTES : A slice of tomato or a peach half may be placed
    on top of bacon if desired. Claudia Sanders was Colonel
    Sanders' (of Kentucky Fried Chicken) wife. She had her
    own restaurant which still serves family style meals.
