Title: Donald Manning's Favorite Crab Cake

Yield: 6 Servings
1 lb Back fin crab meat
1/2 c Ritz cracker crumbs
1 tb Mustard
1 tb Parsley; chopped
1 tb Lemon juice
1 lg Egg
1 tb Mayonnaise
3 ts Worcestershire sauce
2 ts Old Bay Seasoning
1 tb Butter
1 tb Olive Oil
Combine cracker crumbs and all the ingredients (except
crab meat).
Mix with a spoon into a loose peanut butter consistency.
Fold in crab meat to combine.
Make into 6 cakes.
Heat 1 Tbsp. butter and 1 Tbsp. Olive Oil in a pan and
add cakes.
Cook until golden brown and flip. (About 5 min per side)
A NICE EXTRA: Aioli sauce for crab cakes - 2 Tbsp mayo,
1 Tbsp mustard, lemon zest, a dash lemon juice, salt &
pepper to taste.
