Title: Amelia's Baked Crab Cakes

Yield: 2 Servings
6 oz Can crabmeat; drained,
- flaked, cartilage removed
1/2 c Soft bread crumbs
1/4 c Shredded carrot
1 lg Egg; lightly beaten
1 tb Butter; melted
1 ts Minced fresh parsley
1 ts Mayonnaise
3/4 ts Worcestershire sauce
1/4 ts Ground mustard
1/8 ts (ea) salt & pepper
Tartar sauce; opt
In a large bowl, combine the first 11 ingredients. Shape
into four patties; cover and refrigerate for at least 30
minutes.
Place crab cakes on a baking sheet coated with cooking
spray. Bake @ 350ºF/175ºC for 25 minutes or until golden
brown. Serve with tartar sauce if desired.
