    Nope, I mean a family recipe that takes quite a bit to make and spends at least 2 or 3 days heating in a large pot to have all the flavors come together.

    *all* wines are getting higher in alcohol content - people want a big
    presence with their wines. I'd argue it's like the MP3 wars -- people
    want loud music in little earbuds, and subtlety suffers.

    When you amp up the alcohol content in wine you overshadow some really interesting flavors - unless you're starting with boring grapes.

    Climates getting warmer yield grapes with higher sugar contents, more alcohol killing some of the fragrances. As you pointed out.

    The quality of French wines is going down the drain and South African and Australian wines are becoming more popular.
