    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Coca Cola Cake
    Categories: Cakes, Desserts, Dairy
    Yield: 15 servings

    2 c A-P flour
    2 c Sugar
    1 ts Baking soda
    1/2 ts Salt
    1/2 ts Ground cinnamon
    12 oz Can cola
    1 c Butter; cubed
    1/4 c Baking cocoa
    2 lg Eggs; room temp
    1/2 c Buttermilk
    1 ts Vanilla extract

    12 oz Can cola
    1/2 c Butter; cubed
    1/4 c Baking cocoa
    4 c Confectioners' sugar;
    - sifted

    Set oven @ 350ºF/175ºC. Grease a 13" X 9" baking pan.

    In a large bowl, whisk the first 5 ingredients. In a
    small saucepan, combine cola, butter and cocoa; bring
    just to a boil, stirring occasionally. Add to flour
    mixture, stirring just until moistened.

    In a small bowl, whisk eggs, buttermilk and vanilla
    until blended; add to flour mixture, whisking
    constantly.

    Transfer to prepared pan. Bake 25-30 minutes or until a
    toothpick inserted in center comes out clean.

    About 15 minutes before cake is done, prepare glaze. In
    a small saucepan, bring cola to a boil; cook 12-15
    minutes or until liquid is reduced to 1/2 cup. Stir in
    butter and cocoa until butter is melted; remove from
    heat. Add confectioners' sugar; stir until smooth. Pour
    immediately over hot cake.

    Here's one of my favorite cakes though I really shouldn't have it anymore:

    Title: Cherry-Pineapple Dream Cake

    Yield: 8 Servings

    1 1/2 ts Vanilla
    1 ts Vinegar
    8 Egg whites
    2 c Sifted sugar
    2 c Heavy cream
    1 c Crushed pineapple, drained
    3/4 c Maraschino cherries

    Add vanilla and vinegar to egg whites; whip until mixture forms
    peaks. Add sugar, 1 tbsp at a time, beating until stiff and sugar is
    dissolved. Bake in two round layer cake pans lined with aluminum foil
    at 300F for 1 hour and 15 minutes. Cool well in pans.

    Whip cream; add pineapple and cherries. Frost the layers with cream
    fruit mixture like layer cake. Chill 12 hours or overnight. Yield: 12
    servings.

    Also in the glaze. If you use diet in the cake itself it might clash
    with the cocoa. Or not.

    As a fellow diabetic I don't eat cake often. When I do I've "saved up my
    sins" so I can get away with a bit of indulgence. Like this one - which
    does work with Jello's diet pudding mix.

    Title: Chocolate Bundt Cake
    Categories: Cakes, Desserts, Chocolate
    Yield: 9 Servings

    15 1/2 oz Box Duncan Hines dark
    - chocolate cake mix
    5 oz Box instant chocolate
    - pudding mix
    3/4 c Water
    1/2 c Oil
    4 lg Eggs
    8 oz Dairy sour cream
    6 oz Pkg. chocolate chips

    Place first six ingredients in bowl. Beat at low speed
    to moisten, beat at medium speed until creamy. Fold in
    chocolate chips. Grease tube or bundt pan.

    Bake at 350ºF/175ºC for 50 - 55 minutes. Test by
    inserting toothpick until it comes out clean. Be sure
    toothpick is hitting into cake an not into a melted
    chocolate chip.

    OPTIONAL: Dust with confectioners' sugar.
