    09 February 1971 - BASEBALL HALL OF FAME NOMINATES SATCHEL PAIGE:
    Arguably the greatest pitcher in baseball history is recognized for the
    sport's highest honor, as Satchel Paige becomes the first player from
    the segregated Negro Leagues to be voted into the Hall.

    Satchel Paige became the first African American pitcher in American
    League history in 1948, which he helped the Cleveland Indians become
    World Series champions that year.

    Satchel Paige was a living legend. Known as the greatest pitcher in the
    Negro Leagues, it is possible that he was the greatest pitcher that ever
    lived.

    Title: Hall of Fame Presto Pesto Panko Chicken
    Categories: Poultry, Breads, Citrus
    Yield: 4 servings

    1 c Panko Breadcrumbs
    1 c Mozzarella Cheese
    24 oz Boned, skinned chicken
    8 tb Pesto
    1 Lemon
    2 ts Olive Oil
    Salt & pepper
    1 ts Oil

    Adjust racks to middle position and SEt oven @
    450ºF/232ºC.

    In a small bowl, combine panko, mozzarella, a drizzle of
    olive oil, and a pinch of salt and pepper.

    Place chicken on a lightly oiled baking sheet. Brush
    tops of chicken breasts with a thin layer of pesto (you
    may have some left over). Mound coated sides with crust
    mixture, pressing to adhere. Roast on middle rack until
    chicken is cooked through, 20-22 minutes.

    Serve with ;emon wedges on the side.
