I have to wait a few days to get a few more ingredients but I am definitely going to make this! I have some potatoes I was wondering what I was going
    to do with them. :D

To continue the Aussie theme I have going this packet:

    Title: MUTTON & CORN CHOWDER
    Categories: Mains, Soups, Lamb, Australian
    Yield: 4 Servings

    2 c Cooked mutton; diced
    1 sl Bacon rashers; chopped
    1 c Celery stalks; diced
    3 md Potatoes; peel/dice
    1 c Water
    Salt
    Cayenne
    420 g Corn- creamed; tinned
    1 c Milk
    1/2 Capsicums- red; diced
    1 c Parsley leaves; chopped

A delicious way to use up the end of a leg of cold mutton.

Re-tenderise meat by gently cooking in a large saucepan with bacon,
celery & onion. Cook till onion has softened [about 5 minutes]. Add
the potato & cook, stirring for 1 minute. Add water & seasonings, mix
well & simmer covered for 10 minutes, or till pot

Mix in the corn, milk, capsicum & parsley & bring to the boil. Reduce
heat & simmer for 3 minutes.

    Serve with crusty bread.
