    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Macho Nachos
    Categories: Appetisers, Snacks, Chilies, Dairy, Dips
    Yield: 3 Dozen

    1 tb Trappey's RED DEVIL cayenne
    - pepper sauce (or more)
    9 oz Can prepared bean dip
    Nachos or tortilla chips
    Shredded cheddar cheese
    10 oz Guacamole dip (prepared)
    16 oz Sour cream
    Trappey's Sliced Jalapenos

    Stir 1 tablespoon of RED DEVIL into the bean dip and spread
    on chips. Sprinkle with cheese and microwave until softened.
    Top with guacamole dip and sour cream; garnish liberally
    with TRAPPEY'S Sliced Jalapeno Peppers.

    I love nachos. My favorite were Fajita Nachos from Senior Sams in Corvallis, OR. That location has gone out of business, but there is still one in Medford. It's basically assembled to order in front of you, similar to how sandwiches are made at Subway. The fajita nachos have sauteed vegetables on them. The Corvallis location had a salsa bar with lime quarters, cilantro, etc. Tasted pretty fresh for nachos.

    Here's one you can make at home. I'd suggest adding some pickled jalapenos. Sliced or diced (minced) for a really stellar taste experience.

    Title: Baked Potato Chip Nachos
    Categories: Five, Appetisers, Potatoes, Cheese
    Yield: 6 Servings

    6 lg Potatoes; peeled, thin
    - sliced
    2 tb Olive oil
    1 tb Salt
    1 c Shredded Cheddar cheese

    Set oven to 425-|F/218-|C.

    Line a rimmed baking sheet with parchment paper.

    Spread potato slices out on baking sheet. Coat with olive
    oil and salt.

    Bake potatoes in the preheated oven until tops are golden
    and edges are crispy, 15 to 20 minutes.

    Layer baked potatoes with Cheddar cheese; continue baking
    until cheese is melted, 5 to 10 minutes.

    Last night's supper was a head arrangement of Dos Rios taco meat (which
    I had bought 5 chubs of whe it was on sale) that is too fine-ground and
    "oily" for *my* tacos. I dropped one of those into the baby crockpot and
    added a couple cans of refried beans and an old (who knows how old) jar
    of Pace Picante sauce. Went to work, came home, gave it a stir and added
    some shredded yellow cheese over the top. Put the crock in the middle of
    the table and we dipped out what we wanted with tortilla chips. Wasn't
    wnoufh left to save so the crock went on the floor for the days to pre-
    wash. I may do that one again.

    ... Whenever I get a grip on reality, the handle falls off.
