    Going through my fall beet and squash recipes I came across an
    interesting South African dish that uses both of them:

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Lesotho Beetroot, Orange And Pumpkin Sambal
    Categories: African, Vegetables, Condiments
    Yield: 2 quarts
    800 g Cooked beetroot, peeled and
    Diced
    1 Cinnamon stick
    450 g Pumpkin, peeled and finely
    Grated
    Finely-grated zest of
    2 Oranges
    1 tb Mustard powder
    600 ml Malt (or red wine) vinegar
    220 g Granulated sugar
    1/2 ts Cayenne pepper
    1 tb Curry powder

    Like surrounding South Africa, Malay influences are quite strong
    in Lesothan cuisine with spicy curries and chutneys.

    Combine all the ingredients in a large pan and bring to a boil.
    Reduce to a simmer, cover and cook for 30 minutes, stirring
    occasionally. Allow to cool a little then spoon into sterilized jars
    and seal. Allow to mature for at least 3 weeks before using. Store
    in a cool, dry, place.

    Hi Jim,

    Back in the real world again. We were on a cruise ship this past week,
    out of NYC to Boston, Providence and then Sydney, Cape Breton and
    Halifax, NS. We went with Steve's mom, siblings & spouses and a niece.

    We used to have them quite often when I was growing up, more for snow
    than for cold. I understand now that the county Board of Education is considering doing away with them, making the kids do on line classes
    when conditions are too bad to transport students.

    Something to consider as we're moving into cooler temperatures. Our
    older daughter (in Utah) said they had snow flurries today. We were in
    the 60s but I'm browsing the instant pot cook book for colder weather
    recipies.
