    Title: Quick and Easy Swiss Steak
    Categories: Beef, Steak, Potatoes, Easy, Pasta
    Yield: 4 Servings

    1 lb Boneless beef sirloin or top
    Round steak; 3/4 inch thick
    3 tb Cornstarch
    14 1/2 oz Can Beef Broth
    2 tb Vegetable oil
    1 md Onion; cut into wedges
    1 Stalk celery; sliced
    1/2 ts Garlic powder
    1 c Cut-up canned tomatoes
    4 c Hot cooked rice; noodles or
    Mashed potatoes

    Slice beef into very thin strips. In bowl mix cornstarch and broth
    until smooth. Set aside.

    In medium skillet over medium-high heat, heat half the oil. Add
    beef in 2 batches and cook until browned. Set beef aside.

    Reduce heat to medium. Add remaining oil. Add onion, celery and
    garlic powder and cook until tender-crisp. Pour off fat.

    Add tomatoes. Stir cornstarch mixture and add. Cook until mixture
    boils and thickens, stirring constantly. Return beef to pan and
    heat through. Serve over rice.

    Title: Quick Baked Pasta Family Style
    Categories: Beef, Casseroles, Pasta, Groundmeat, Cheese
    Yield: 6 Servings

    2 tb Olive oil
    1 lb Ground beef, lean
    2 cl Garlic; crushed
    1/2 c Half and half
    3/4 c Marinara sauce
    3/4 lb Penne pasta
    1/4 c Parmesan cheese; grated
    1 ts Dried oregano
    1/2 ts Dried rosemary
    Salt and pepper; to taste
    1 c Mozzarella cheese; grated or
    Swiss cheese; for topping

    Bring 4 quarts of water to a boil. Heat a large frying pan and
    add oil, beef and garlic. Saute until the meat is tender and then
    drain excess fat. Add all remaining ingredients except the
    Mozzarella cheese and pasta. Simmer the mixture while pasta cooks
    until al dente. Drain pasta and mix it with the sauce. Pour all
    into a 3 quart baking dish and top with the remaining cheese. Bake
    uncovered at 350F for 25 minutes or until bubbly hot.
