    Title: Senate Bean Soup
Categories: Soups, Pork, Beans, Vegetables, Potatoes
    Yield: 6 Servings

1 lb Dry white beans; soaked
    - overnight
    1 Meaty ham bone
    +=OR=+
    2 Smoked ham hocks
    3 qt Water
    3 lg Onions; fine chopped
    3 cl Garlic; fine chopped
    4 Ribs celery; w/leaves, fine
    - chopped
    1/4 c Parsley; fine chopped
    1 c Cooked mashed potatoes
    Salt & pepper

    GARNISH: minced parsley or chives

Strain the water from the soaked beans and put in a big
pot with 3 quarts of water and the ham bone or ham hocks.
Bring to a boil, then reduce heat and simmer for 2 hours.

Stir the chopped vegetables and herbs into the pot--and
also the mashed potatoes and cook over low heat for
another hour--until the beans are nicely tender.

Remove the bones from the pot--cut off the meat into small
bits and return the meat to the pot, discarding the bones.

When ready to serve, ladle into bowls and garnish with
pinches of herbs. For "U.S. House of Representative Bean
Soup" authenticity, crush a few of the beans in each bowl
to thicken the broth and make it slightly opaque.

Title: Steak & Kidney Pie w/Guinness
    Categories: Pies, Beef, Beer, Offal
    Yield: 6 Servings

2 lb Chuck Steak; trimmed, in
    - 1/2" pieces
12 oz Ox Kidney; cored, chopped
    1/4 pt Guinness
    4 tb Beef Dripping
    2 md Onions; sliced
    3 tb Flour; liberally Seasoned
    2 lg Mushrooms; sliced
3/4 pt Beef Stock or water
    1 Bay Leaf
    4 Thyme sprigs

    MMMMM---------------------------PASTRY--------------------------------
    8 oz Self-raising flour
4 oz Shredded suet or lard
    Salt & Pepper
1 lg Egg yolk; mixed with a
    - splash of milk

Place the steak and kidney in a bowl with the guinness and
herbs. Cover and leave for at least 4 hours, preferably
overnight. Drain the meat, reserving the marinade. Toss
the meat in the seasoned flour.

Heat 1 tsp of the dripping or lard in a large, heavy pan
and gently fry the onions for five minutes. Remove the
onions to a plate, add more of the dripping to the pan
and fry the floured meat in batches until it's browned
on all sides. Return the onions and the rest of the meat
and any remaining flour to the pan. Stir thoroughly, then
add the mushrooms, marinade, herbs and stock or water.

Bring slowly to a simmer, stirring as the sauce thickens,
then cover the pan and cook gently for 1 1/2 hours. Taste
the gravy, adjust the seasoning with salt and pepper and
remove the herbs. Transfer to a deep pie dish, place a pie
funnel in the middle and leave to cool.

TO MAKE THE PASTRY: Sift the flour into a bowl. Sprinkle
in the suet or add the lard, season with salt and pepper
and mix lightly with your hands. Sprinkle in 2 tb of cold
water, adding more as you mix with a knife. As it begins
to clump together, use your hands to work it into a
smooth, elastic dough. Leave to rest for five minutes,
then roll out the pastry slightly thicker than normal.
Cut a one-inch strip and lay it around the inside edge
    of the pie dish.

Dampen it with water, then put the pastry lid in place.
Trim and crimp the edge, knocking it back with the flat
blade of a knife so that the actual edge looks as deep
as possible. Make a small steamhole in the centre and
cut some leaves from the pastry trimmings to decorate the
top. Paint the pie lid with glaze. Bake in a pre-heated
oven to 200ºC/400ºF/Gas Mark 6 for 15 minutes. Lower the
heat to 180ºC/350ºF/Gas mark 4 and cook for 30 minutes
until the pastry is golden brown.

29 September 1954 - THE MIRACULOUS MAYS MAKES AN INCREDIBLE CATCH: It's
Game 1 of baseball's World Series and Cleveland Indians' batter Vic
Wertz hits a fly ball 450 feet into centerfield where the New York
Giants' Willie Mays is there to catch it. Over his shoulder. And with
his back to home plate. 'The Catch' will live on in baseball lore.

In the top of the 8th inning with the score tied 2 - 2, Giants starting
pitcher Sal Maglie walked Indians lead off hitter Larry Doby. Al Rosen
singled, putting runners on first and second. New York manager Leo
Durocher summoned left-handed relief pitcher Don Liddle to pitch to
    Cleveland's Wertz, a left-handed batter.

Wertz worked the count to two balls and one strike before hitting
Liddle's fourth pitch approximately 420 feet (130 m) to deep center
field. In many stadiums the ball would have been a home run, which would
have given the Indians a 5 - 2 lead. However, the Polo Grounds center
field was larger than average, and Mays, who was playing in shallow
center field, made an on-the-run, over-the-shoulder catch at the warning
track for the out. Having caught the ball, he immediately spun and threw
to second base. Doby, the runner on second, might have been able to
score the go-ahead run had he tagged at the moment the ball was
caught;[3] as it was, he ran when the ball was hit, then had to scramble
back to tag. Mays' throw went to second base, holding Cleveland to
runners at first and third with one out.

    Title: Baseball Chicken
    Categories: Poultry, Breads, Herbs
    Yield: 4 Servings

1/2 c Biscuit mix; Bisquick, etc.
    3 tb Cornmeal
1 1/2 ts Fine chopped fresh rosemary
    +=OR=+
    1 ts Crushed dry rosemary
    1 ts Salt
    1 ts Sweet paprika
    1/4 ts Garlic powder
1/2 ts Fresh ground black pepper
4 tb Unsalted butter; in small
    - pieces
3 lb Chicken; in 8 to 10 pieces

Place a rack in the middle of the oven and set @
    375ºF/190ºC.

Place a paper bag inside another paper bag to reinforce
it. Then, in the inner paper bag combine the biscuit
mix, cornmeal, rosemary, salt, paprika, garlic powder
and pepper. (You may also use a food container with a
tightfitting lid rather than the bags.)

Spray the rack of a broiler pan with nonstick spray.

In a shallow microwave-safe bowl, melt butter in the
microwave on HIGH for about 1 minute. Working with a few
pieces at a time, dip the chicken in the melted butter.
Gently shake the chicken pieces and use your fingers to
remove excess butter, allowing it to drip back into the
    bowl.

Place the buttered chicken in the bag, or container,
    and gently shake to coat.

Shake off the excess coating from each piece, then place
the pieces on the broiler rack, so they are not touching.
Breasts and thighs should be bone-side down.

Bake, uncovered, for 1 hour until golden brown and skin
    is crisp.

Let the chicken rest 5 minutes before serving.
